Hearty chicken noodle soup is highly recommended. 
Ingredients: 
• Six boneless skinless chicken thighs, weighing approximately 575 g/1 lb 4 oz 
• 2 L (8 cups) of water 
• Two sprigs of fresh parsley 
• One chopped onion 
• One chopped carrot 
• One minced garlic clove 
• One cup of whole-grain egg noodles 
• One cup of frozen peas 
• Grated Parmesan cheese (1/4 cup) 
• chopped fresh basil or parsley, (2 tbsp) 
• Optional: hot pepper sauce 

How to Cook? 
Set aside any visible fat on the chicken thighs. Boil water with parsley, onion, carrot, garlic, and trimmed chicken thighs in a soup pot or Dutch oven. Remove any foam that forms over the top and reduce the heat to a simmer. Let the chicken cook for 15 minutes.
Place the chicken thighs on a clean cutting board with tongs. Once cool, chop into small pieces. Return chopped chicken to broth with noodles, peas, cheese, and basil; cook for about 5 minutes or until noodles are tender. If desired, top each with a splash of hot sauce. 

Tips 
• Save time by doubling this recipe, freezing extra servings, and preparing individual soup to make ready-to-eat meals. 
• Use two smaller pots if you don’t have a large pot. 
• Make sure you use fewer ingredients that contain added sodium, sugars, or saturated fat. 
• How about adding sugar to the recipe? You only need a little bit.

If, like me, you also enjoy seafood, keep reading this tasty dietary recipe. It’s a rainbow of fresh, in-season fruits and vegetables that add vitamins and minerals to your diet.  
One-Pan Salmon and Vegetables
This recipe is so straightforward. We first need flaky and richly pink salmon, a low-calorie protein source rich in heart-healthy omega-3 fatty acids and energy-boosting B vitamins. You can replace salmon with another crispy fish like tilapia or trout. Bring out the veggies from the fridge; you may add potatoes for a heartier dish too.
Ingredients
• 1 sliced squash or zucchini
• ½ onion, cut into wedges
• 1 cup cherry or grape tomatoes
• 1 sliced bell pepper
• 3 tablespoons of olive oil
• 1 teaspoon of Cajun seasoning or your favorite fish-seasoning spice
• 2-3 salmon fillets, about 4 ounces each
• 1 lemon, optional

How to make:
1. Heat the oven to 450 F almost 10 minutes in advance. Grease the pan with vegetable oil.
2. Cover all veggies with 2 tablespoons of oil and seasoning in a large bowl, and then spread them on a baking sheet.
3. Put your salmon fillets, skin side down, between the vegetables. Cover everything in olive oil with a brush. (It would be best to pour lemon juice on salmon an hour before cooking).
4. Roast for 12-15 minutes until salmon is flaky and opaque.
5. Add 1 salmon fillet and a heaping serving of roasted veggies to each plate for a healthy and satisfying meal. Enjoy!

In short, a suitable recipe for seniors should have two main factors: It should be healthy and easy to make. So here are the recipes I suggest, which are both nutritious and easy for seniors:
For Breakfast:
1. Fruit salad
2. Banana smoothie
3. Peanut butter and toast
4. Apple or carrot juice
5. Oatmeal

For Lunch:
1. Vegetable soup
2. Veggie fried rice
3. Mashed potato
4. Spinach and Mushroom Omelette

For Dinner:
1. Chicken enchilada casserole
2. Garlic pasta
3. Chicken noodle soup
4. Curry

It is entirely dependent on what you need to eat. The majority of people, including diabetics, should avoid carbohydrates. Sugary beverages and caffeinated drinks are just terrible for you. Neither is a high-protein diet. If you had mentioned the dietary restrictions, I could answer you better. One of my grandfathers had hyperlipidemia. Although he wasn’t physically fat, he avoided consuming high cholesterol foods on his doctor’s order.
As I clearly remember, he only ate roasted zucchini with yogurt, roasted chicken breast, and sometimes roasted trout fish for dinner. Since my grandmother passed away many years ago, he had to prepare his meals. The recipe was straightforward. Just grab a pan, pour very little oil, and roast it. Unless the food wasn’t greasy, it was OK for him. Again, the dietary restrictions provided by a doctor are crucial to answering this question correctly.
